SantaFe Chicken

Combine the following in your crockpot:

1 can black beans drained
1 can corn (I used about 1 cup frozen corn instead)
1/2 cup salso

After stirring add:

4 boneless, skinless chicken breasts
1/2 cup more salsa

Cook on low for 3 hours. Then add,

1 block of cream cheese

Cook one more hour. Serve over rice with flour tortillas.


It calls for 2 cans of chicken broth, 1
30 oz. bottle of salsa (I like the chunky kind) 2 cooked chicken breasts cubed, 2 cans of white navy beans drained, 1 tsp cumin, 1 tsp salt. I also like to throw in some frozen corn. Simmer for 20 minutes or so
