Mallonee's Red Beans and Rice

2-3 Cups Dried Red Beans
2 Quarts Water
1 Lg. Onion, Chopped
1 t. Garlic Powder
1 lb Hot Sausage (or normal w/2 shakes of Tabasco)
1 1/2 lb. Ham Hocks
Cooked Rice

Cook beans,onions and garlic in the 2 quarts water, boil for 1/2 hour (uncovered). Meanwhile cut and fry sausage and drain fat. Add Sausage and ham hacks to beans. Cover and simmer for 2-3 hour (until beans are tender). Take out ham hocks and chop up meat and return to beans. Mash some beans. Serve over cooked rice.
*May need more water.
**Will not freeze well with rice
