Mix and allow to soak:
1 1/2 Cups old-fashioned rolled oats
1 1/2 cups buttermilk
Combine well:
2 eggs
1/2 cup brown sugar
1/2 cup canola oil
Oat mixture
1 tsp. vanilla
In smaller bowl combine well:
1 1/2 cups flour
1 Tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
Gently fold wet and dry ingredients until just mixed. Add 1 cup fresh or frozen blueberries at the last moment if desired. Spoon into prepared muffin tins. Bake at 400 for 20 min.
