4 or 5 chicken breasts and cut into pieces
3 lbs. Jimmy Dean Sausage (sage)
¼ cup vegetable oil
2 TBSP. Flour
1 ½ cup chopped onion
½ cup green pepper
¼ cup chopped fresh parsley
1 ½ tsp. Minced garlic
¼ cup chopped celery
1 tsp. Salt
1 tsp. Thyme
1 bay leaf
½ tsp. Cayenne pepper
½ tsp. Cumin
½ tsp. Black pepper
¼ tsp. White pepper
½ cup chicken broth
3 cups cooked rice
Cook sausage in skillet in flour, onion, green pepper, celery and garlic, parsley, salt and spices.
Simmer 20 minutes. Add chicken broth, simmer 5 more minutes. Add to rice.
