Doesn't the plastic wrap melt?

Plastic wrap will melt if you put in on all by itself but when you put the foil over it, it doesn't melt. The reason you put wrap and foil is that when you cook tomatoes for a long time with foil alone the acid eats the foil and then you'll be eating foil.
You can use just foil if that makes you feel more comfortable, just make sure the foil is tight, so not touch the watery tomato sauce while cooking.

This is a great recipe, but makes a TON of food, so if you are having guests or something, this would be perfect!
