3 ½ Cups Flour
Pinch of Salt
1 T Baking Powder
¾ Cup Cold Butter
½ Cup Sugar
1 Egg
½ Cup Milk
1 Egg (lightly beaten)
Combine Flour, Salt and Baking Powder. Cut in butter until mixture is crumbly. Stir in Sugar (and fruit or nuts if desired). Stir well. Add Egg and milk. Mix with large fork until mixture forms soft dough. Add more milk if needed (1 Tablespoon at a time).
Turn dough onto a floured surface and knead lightly for 30 seconds to form a smooth dough.
Divide dough in half and pat each half into a circle about ½ “ thick. Cut circle into wedges. Brush wedge with beaten eggs. Place oh hot baking sheet. Bake at 425 for 10 minutes.
Makes 12 scones
