Mimi’s Carrot Bread

*From the Restaurant Mimi’s Cafe

1 ½ Cup Flour
1 t. Cinnamon
1 t. Baking Powder
1 t. Baking Soda
1 t. Salt
1 Cup Vegetable Oil
1 Cup + 2 T Sugar
3 Eggs
¼ Cup Molasses
½ t. Vanilla
1 Cup Shredded Carrots
¾ Cup Walnuts

2 – 8” Pan. Bake at 350 for 60 minutes.
