Fran’s Greek Salad

Prepare: 2 Cups rice cooked in chicken broth

In a Bowl:
1 Cup chopped Celery
1 Cup Chopped Green Onions
½ Cup Chopped Parsley
2 Jars Marinated Artichokes (drained and chopped) *save the marinade
1 Can Sliced Ripe Olives

Dressing:
1 Cup of Mayo
1 T. Vinegar
2 tsp. Curry
1 T. Soy Sauce
Artichoke Marinade*

Mix: Together with Chicken, Shrimp or Crab

Cover and chill.
