Zucchini Pancakes

2 Eggs
1/3 Cup Bisquick Mix
1/4 Cup Grated Parmesan Cheese
2 Chopped Onions (optional)
Dash of Pepper
1 Medium Zucchini shredded, about 2 cup

Mix all together. Heat Griddle or Skillet over Medium Heat (about 375). Lightly grease griddle with veggie oil or cooking spray. Pour 2 Table Spoons of batter and spread around forming each pancake. Cook until browned on each side.
